Ingredients

1 ½ cups all purpose flour
¾ cup SFH PURE Whey Coffee Flavored Protein
½ teaspoon baking powder
½ teaspoon salt
2 eggs
1 cup salted butter or plant-based alternative
2 cups light brown sugar
2 teaspoons vanilla extract
½ teaspoon instant espresso powder (optional; for extra coffee flavor)
¾ cup dark chocolate chips or dark chocolate chunks

Directions

Pre-heat oven to 350° F. Rub a 9″ x 13″ baking pan with a light layer of butter and line the bottom and sides with parchment paper for easy removal.
Whisk together flour, SFH Pure Whey Protein Coffee Flavor powder, baking powder, and salt in a medium bowl then set aside.
Gently cook butter over low heat until just melted, stirring often. Transfer butter to a large mixing bowl with brown sugar and whisk until smooth. Then, whisk in one egg at a time, followed by vanilla extract and espresso powder.
Pour dry ingredients on top of sugar mixture and fold/stir with a spatula until the batter is thick and gooey. Fold in most of the chocolate, reserving a few pieces for topping.
Transfer batter to prepped pan, smooth out top with a spatula, and sprinkle on remaining chocolate. Bake for 25-28 minutes or until a toothpick inserted into the middle comes out clean.
Rest blondies for at least 15 minutes, slice into pieces, and store leftovers in an airtight container or plastic bag for up to 5 days.
