½ cup coconut oil

¾ cup brown sugar

1 large egg

1 teaspoon vanilla

¼ cup old fashioned oats

1 ½ cup SP flour

1 scoop SFH PURE Vanilla

½ tsp cinnamon

1 tsp baking powder

Pinch of salt

2 medium apple peeled and sliced thinly

2 teaspoon lemon juice
-
1 cup water
-
3 tablespoon brown sugar
-
½ teaspoon vanilla extract
-
1 teaspoon cinnamon
-
½ teaspoon ginger
-
Pinch of nutmeg

Graham crackers for garnish
Directions
In a large bowl, mix the apples and lemon together to keep them from darkening. Set aside.
In a medium saucepan, add in the water, brown sugar, vanilla extract, cinnamon, ginger, all spice, and nutmeg, and whisk to combine. Bring to a bowl on medium heat and cook for 1-2 minutes or until it thickens a little bit
Mix in the slices apples and stir to coat them in the liquid mixture. Cover with a lid and cook for 15-20 minutes, stirring from time to time. The apple should be soft. Remove from the heat and set aside to cool.
Preheat oven to 350F then line a baking sheet with parchment paper and set it aside
In a large bowl, mix together the coconut oil and brown sugar. Add in the egg, and vanilla and mix again to combine
Mix in the oats, flour, cinnamon, baking powder, and salt just until the dry mixture disappears
Using a large cookie scooper, scoop out 7 equally sized cookie dough balls, place them on the prepared baking sheet and gently press down the back of a ¼ cup measuring cup. Bake in the preheated oven for 12 minutes.
Top each cookie with the apple pie filling then top it with crushed graham crackers and enjoy.
